The splashback is another opportunity for a large surface of complementary colour making the kitchen a lively or fun or subdued kitchen. The other purpose of the splashback is to make the work surface hygienic and easy to clean.  Where tiles have been used in the past the grout lines between the tiles absorbs oil and fat from cooking fumes and eventually becomes black. Coloured glass is now a relatively cost effective option for colour and has no grout. Easy to clean and can be used as a writing pad to leave notes for the family. There are other surfaces which also have solid clean surfaces and depending on the style and the cost are more or less popular.
